Backing out air/fuel for sync....why?

Hello all. I was in the military for 30 years, so I have no problem blindly following instructions. But I'm going to sync my carbs again and I'm wondering why do I need to back the air fuel screws out a turn first?
 
I've synched my carbs every Spring since 2002 and I've Never touched the A/f Screws to synch them.
I do set my Idle up to 1500-1800 to get a bit higher readings to make the synch easier to read though and just reset it to 1000-1100 when I'm done.
Someone gave you some incorrect Vmax Carb Synching Instructions.

Glad I asked, lol. Now I can't find the "how to" that said to back each one out a full turn first. In my defense, it didn't make sense, hence the question. Thanks guys.
