Can you post one of those photos? Not endorsing this product but this is the correct orientation. In fact...without some modification these won't work worth a damn!

It goes in the groove.

Any light flexible piece of plastic will work. Trim the edge so it's flat, cut a 1" or so hole in the center for the spring, cut a slot to allow for the spring. Use the plastic to hold the diaphragm in the groove, place the cover on and gently slide the plastic out.

I use the plastic top from a cottage cheese container with a center hole for the spring, place the cover and slide the plastic out. A little WD-40 helps.

2 1/2 out is the factory recommended setting

Check the elevation of the oil in the sight glass, with the bike on the side stand...it should be below the water pump.

What are the numbers on the bottom of the throttle plates.

It can be either....high rpm when hot sounds like lean. Supported by the bike running strong, VMax likes lean. Did you try adjusting the mixture screws?

What do you have for exhaust?

Are the headers stock or part of an aftermarket system? The old carbs may have been stg 7 with air correctors to compensate for richness. You may be mix/matching aftermarket headers with stock carbs.
