To "electricians". Do I have to stop voltage to coils if "stop" switch is turned off?

A quick check of the schematic would give you the quickest answer. Usually the off switch breaks that connection. But given that you reference just about every motorcycle known to man around these parts, hard to give you a quick answer. Look it up.

A continuity tester should tell you if there's current to the coils, easy-enough. Even a lightbulb in a fixture and using the fixture wires will tell you. Be sure to reverse polarity on the wires in case you don't have it grounded properly.

My bike has start switch from some other bike, so I had to figure out wires and modify switch. It is probably switch from a space ship, Boeing or nuclear submarine. :)
