Thanks for all the info, I am liking the twistgrip manual shifter idea that sounds neat.
I thought wiring up a on off button may have some tech issues, I thought since I tested the servo just adding 12 volts to the round plug and it opened then took 12v away it closed that it would be a simple hookup, as long as you didnt leave the button on for a extended time??

12 volts to close, 12 volts to open, opposite polarity for opposite direction of travel.
It can be done with a 3 position DPDT switch using the servo only, skipping the controller all together. Switch needs to be center off, momentary operation for throw in each direction. Radio shack or fry's has them.

You can possibly use a maintained (non spring return to center off) but you would have to be very careful about not leaving it in POS 1 or POS 2, and risk burning the motor up or starting a fire if you forget or it's accidentally bumped to POS 1 or 2
 
On my servo the motor wires are black/yellow stripe, black/red stripe.
The other wires are just a form C limit switch.
You can use a small 9 volt battery and some jumper leads to the round connector to play with it and find the motor wires and see what polarity drives it which direction.
