..The bike I am looking at is a black 2007 Vmax with 6000 KMs on it. When looking at Vmax's is there anything to look out for?...

Buying a motorcycle isn't any different than buying any other vehicle, look for overall condition, obvious things like smoking, knocking, etc. and especially in these areas,
-check underneath the footpegs for scrapes which would suggest that portion of the bike has come in contact with the road, for whatever reason.
-Look at the bottoms of the headers....for the same reason.
-Check inside the rear fender for shredded rubber (which would indicate burnouts)
-Check around the battery for any indication of spilled acid (indicating the bike has been on it's side)
-Look at the tips of the mirrors and handlebar ends for scrapes
-Take the bike for a test ride accellerating hard through 2nd gear....V Max's are nortorious for a 2nd gear problem.....popping out of 2nd under accel is a symptom of this.
-Also during the test ride let the bike decellerate from 50mph with a light hold on the bars.....you are looking for a shaking at around 35mph? (called a 'low speed wobble' and could indicate front end issues)
On the 07 you are looking at, did the guy smoke the back tire? Check under the fender for rubber. What type of oil did he use? How did he store the bike, what procedures? Did he power wash it or by hand? Ride in the rain often? Is the bike bone stock? Did he race it?
That is alot of money he is asking so be sure of those things. Mine has never been abused in any way, unless you call occasional power rollons abuse, and it has given me no problems in almost 22,000 miles now, on an 05 bought new.

What would be a realistic range of a Vmax? My dad can ride for around 4-5 hrs without a break. I certainly can't but the only reason I am looking into fuel auxiliary tanks and what not is the distance between gas stations in Canada. My dad and I are planning a trip across Canada and in the prairies there are very few gas stations (Saskatchewan haha) and messing around with jerry cans is kind of a pain.

Seem to be very well made, and reasonably priced.
I've been across Canada twice on a Max. Only had to do the jerry can thing when north of 60. A good GPS unit, loaded with up to date maps, is your best friend on a long trip.
Unless you have a tank like the above, you have to ride with patient companions. The small OEM tank on the Max will dictate the frequency and location of the stops.

I have a Guardian by Dowco which is made w/good material & has held-up well. It has flannel in the front to protect a windshield, and strong elastic around the perimeter. It is vented & has an understrap to go under the bike to help secure the cover.
