I'm back with something good y'all! I made a Sicilian pizza for dinner tonight and it rocked! I made up some fresh dough and some spicy garlic sauce using San Marzano tomatoes. I put some spicy pepperoni and hot Italian sausage on there with over a pound of fresh grated mozzarella, provolone and parmesan cheese. The dough basically gets fried in olive oil as it bakes. It is some righteous stuff! Crispy and chewy.

I used This Recipe for the most part. I added some honey and a little basil to the sauce and for the pizza I used less olive oil than it called for in the pan. I originally used what it said but ended up pouring some off after the dough was risen. I also used more cheese than called for. It's pizza, you make it how you want. I added sausage and it was a good addition. I par cooked the sausage before putting it on the pizza.

I ate 2 slices and was full! Now, I have all of this pizza left over. I guess I know what I am eating for lunch tomorrow, lol!
 
Damn that looks delicious. Question. Did you use a different dough recipe or the one in the recipe? When it comes to a great pizza, for me, it's all about the dough.
 
There's something magical about waking up before the sun, lighting a fire and sitting out in the cool air, smelling smoke and drinking coffee! That's a damn fine start to a Saturday I'd say!

There's basically a food porn channel on YouTube that takes that concept to heart. All outdoor cooking. There's no talking in the videos, just the outdoors and cooking. The sound of the fire cracklin' and popin' and the sound of food sizzlin' to the touch of the heat. It's not your typical cooking channel on YouTube. Here's the latest video they've done:

I used the one in that link. It's fairly close to most of the standard pizza dough recipes I use with the exception of using a lot more yeast. That's how it's able to rise so quickly.

I'm a sucker for freshly caught trout.

Trying to cook them in a more healthier way, I tried simply, skinning them, then in a Pyrex bowl, sprinkling them with McCormicks - Grill mates for 40 minutes @ 350.

Made up some garlic mashed potatoes.. Yummmeeeee!!

Looks fantastic - trout is one of my favorites too. I like to smoke them and make trout dip - cream cheese, capers, dill, lemon, cayenne.....nothing like turning fish into something completely unhealthy :)
 
Did a little chicken BBQ today for my moms church. 65 halves, hour and a half to cook from raw. I use a vinegar based sauce. Some what famous locally. (Chivettas) Used 2 1/2 gallons. It,s good stuff.





 
What happened to the 65th "other half?" Looks great. I bet the attendees were sure the cuisine was 'heavenly!'

You're about 45 miles SW of where I grew-up, on the Erie Canal.
 
WOW, all of this food looks delicious and thanks for the recipes and ideas.
I just got a traeger smoker/grill thing a few weeks ago and everything I've fixed on it has been fantastic. I'll be doing some of those atomic jalapeño turds tomorrow for appetizers (thank you for sharing) before fixing ribeyes and a veggie dish in it for dinner.
My Wife makes a killer green chili amongst other dishes, I'll see if I can get her to write some down and share it if anyone Is interested as there may be some folks that enjoy spicy foods??

Here's a quick and easy one. Cut some jalapeno's in half lengthwise and scrape out the seeds. Soften some cream cheese and mix it with diced green apples, chopped scallions(green onions) and dry ranch spice (ranch dressing will make the filling to wet). Meanwhile par cook some bacon in the oven or microwave then cut them in half. Stuff the jalapeno half's with the cream cheese mix top with a half slice of bacon and roast in a 425 degree oven. I call them M-80s. They sell like mad at my restaurant. Be sure to try a jalapeno before you make the recipe. They heat up as with the season and will eventually be to hot to eat.

Me too, we love the heat but it needs to be a dish where the flavor of everything can be enjoyed along with the heat. :eek:h yeah: can't stand food that you can't taste a damn thing only heat :damn angry

make some pasta, I recommend linguini, but it can be almost anything.

In a skillet, warm olive oil, salt & pepper, and some fresh garlic until the garlic browns. Cut some pepperocini lengthwise, remove the seeds, and sautee them in the pan, this won't take very long. Then add the pasta, again, it won't take very long. Serve with some protein dish of your choosing, fish, beef, veal, chicken, pork.

An alternative to the linguini or other pasta is a cruciferous vegetable like spinach. It doesn't take much cooking time for either.

Capsaicin helps arthritis,psoriasis,decreases itching and inflammation, appetite suppression,kills prostate cancer also used to cure ear infections when used in moderation------I'll keep the seeds and i don't eat pasta.:angry flame:
