I used aircraft paint stripper to clean off my side covers. It works well but use it in a well ventilated area, wear a filter mask(fumes are toxic) and be careful what it is sprayed on, this stuff is strong!
 
Here's a picture of side cover polished and painted so you get an idea of what can be done. Hope the picture is good. The Vmax in the cover just happens to be the reflection of my bike by accident and didn't realize it until later. I can do the covers for you. As far as paint goes, any quality automotive paint is fine but an adhesion promoter is a good idea.

Nice polish job Patrick. You ever polish a rear diff? I'm considering it but could use a couple pointers as to what tools to use. Seems like there are quite a lot of little nooks and crannies to get into.

I got my bike with a polished diff, scoops, grab bar, levers, some of the wheels, and triples.

I think they look great, but it's just too much of a PITA to keep looking good.
You have to pull the diff off to get it polished back up to scratch! Pfft.

I've powdercoated my triples already, and the other stuff will mostly get PC or chrome.

I broke a scoop and clutch lever. I polished up the new clutch lever, but I haven't done the scoop yet. I just see it as starting a never ending job!

BTW. My '85 scoops polished up perfectly well, no porosity in the casting. (But I'm a bit worried about the brand new one, maybe it won't be the same.)
 
Mike, diff takes a great polish for some reason (maybe the composition of the casting?) BUT, as mentioned, you cannot get a big polish wheel everywhere. I used hard wool cones for the crannies and start with an aggressive rouge to start. You might find you go through a lot of cones though. The crannies always look dark though. Chrome is the way to go but costs add up fast. In the end, better look and ease of maintenance goes to chrome
