I don't screw around with chicken so I always use a fully cooked wing then smoke them a couple hours. You could smoke them from raw, you just need to start with a higher temp, 275 I believe.Hey i've done lots o ribs too.....haven't tried wings on my smoker yet. How long are you keeping the wings in?
